Anti-allergic and anti inflammatory pannacotta by Emma Hebert

Aromatherapy is my secret weapon against inflammation and seasonal allergies.

The organic blackcurrant hydrosol from Essenciagua has anti-inflammatory properties and helps reduce histamine release, thus alleviating allergic reactions. Its antioxidant compounds help strengthen the immune system.

The organic tarragon essential oil from Essenciagua @aucoeurdeladistillierie contains anti-inflammatory agents like methyl chavicol, which act by inhibiting allergic responses and reducing respiratory tract inflammation.

The hay fever season is here, so I thought I’d prepare a recipe using these two wonders!

An anti-inflammatory and keto-friendly blackcurrant and raspberry panna cotta.

INGREDIENTS:
- 400 ml of coconut milk (22% fat or more)
- 2 gelatin sheets
- 40 g erythritol x monk fruit (Lakanto)
- 1 tbsp organic blackcurrant hydrosol

RASPBERRY JAM:
- 1 cup (240 ml) frozen raspberries
- 1 tbsp erythritol
- 1 tbsp chia seeds
- 1-2 drops organic tarragon essential oil

INSTRUCTIONS:
1. Soak the 2 gelatin sheets in cold water for 10 minutes. In a saucepan, pour the coconut milk and erythritol and bring to a boil. Off the heat, drain the gelatin sheets and add them to the coconut milk mixture, whisking to dissolve them. Let it cool before adding the blackcurrant hydrosol. Pour into 6 ramekins and refrigerate.

  1. In a saucepan, combine the raspberries, erythritol, and chia seeds. Bring to a boil, stir, and let cool. Add the tarragon essential oil, mix well, and place a tablespoon on each set panna cotta.

  2. Let rest for at least 4 hours.
