Ingredients:
120 g fresh sheep cheese
1 tablespoon wild carrot hydrosol
2 drops rosemary essential oil
1 piece of beetroot (about 30 g)
2 tablespoons olive oil
A bit of cooking water if needed to thin the sauce

Topping: fresh dill, lacto-fermented onion, black sesame, olive oil.
Cut the broccoli into florets, rinse, and steam for 15 minutes.
Meanwhile, put the cream ingredients in a blender and blend until a smooth cream is obtained. Pour the cream onto a plate and add the broccoli. Decorate with the toppings of your choice. Personally, I added fresh dill, lacto-fermented onion, black sesame, and a drizzle of olive oil.
