The cultivated olive tree is a small, stocky tree with a branched trunk from the base. Its evergreen leaves are oblong-lanceolate, dark green above and silver below, with a single prominent midrib.

It grows with patience and frugality, writhing under the blazing sun, in poor and rocky soils, all around the Mediterranean. Easily adapting to the passage of time, emitting shoots if it is cut, it is an immortal tree, it symbolizes longevity; but also prosperity, because it bears fruit generously, offering its ovoid olives, purple to black when ripe, rich in high quality oil, whose reputation is well established. It is a component of the Cretan diet, beneficial for our arteries.

Watching it grow calmly and with dignity, it inspires wisdom and hope.

In Greek mythology, the olive tree was born from the will of Athena during a duel opposing her to Poseidon. She makes it appear by proclaiming that the tree would always remain green, would nourish and heal Men.  The people decided and chose the winning olive tree as a gift for humanity. The city was named Athens and placed under the protection of the goddess of wisdom, reason and strategy.

From then on, the olive tree bore the symbol of peace.
